A beautifully bright kale salad with brussels sprouts & red cabbage in lemon garlic vinaigrette topped with Asiago cheese, cherry tomatoes & Asiago croutons.

At the beginning of 2022 I had the great idea of eating a salad everyday for the year. Since 91% of people don't achieve their New Year's Resolutions, I don't really need to tell you how that's going.
What did come out of it were some delicious salad recipes that wasn't boring lettuce and store bought dressing and calling it a "salad". A good salad should be full of colors, texture and flavors. This kale salad hits all of those marks.
- Kale
- Brussels Sprouts
- Red Cabbage
- Asiago Cheese
- Lemons
- Garlic
- Honey or Agave
- Shallot
- Dijon Mustard
- Salt & Pepper
- Cherry Tomatoes
- Bread
Massage the Kale
Massaging kale softens the leaves so they aren't so tough and less bitter. Some recipes massage kale in oil and salt. I prefer not to use either. I'm not the most health conscience person, however I want to control the portions of each of these especially when I will be adding dressing in addition. Those calories and sodium levels in add up quickly.
Instead I massage kale in water. Here's how to do it:
- Remove the stems and place the leaves in a bowl filled with cold water.
- Gently massage the leaves in bowl till they become a vibrant green and begin to slightly wilt.
The kale will further breakdown as it sits in the dressing giving you even more tender leaves.
How To Store & Make Ahead
For the vinaigrette, mix the ingredients and store in an air tight container in the fridge for up to 4 days.
Follow the directions for making the asiago croutons store in air tight container in a dry cool place for up to 4 days.
For the salad, wash and chopped or shred all the veggies and message the kale. Toss in a large bowl and cover tightly in plastic wrap. Store in the fridge until ready to serve. The salad will stay fresh for about 3 days.
To serve, pour dressing over salad and toss to coat. Top with asiago cheese and croutons and cherry tomatoes. The salad can be served as an entree for 4 or a starter/side for 8 people. If you plan on use it a an entree I suggest adding some protein like salmon or tofu.
.

Enjoy,Tips For Making This Recipe
- Massage the kale for a more tender and less bitter salad.
- This salad can easily be served as a side salad for 8 or an entree for lunch or dinner for 4.
- If you plan on use it a an entree, I suggest adding some protein like salmon or tofu.
- Make it Paleo: Omit the asiago cheese & croutons from the recipe. Make it Keto: For a Keto version of the dressing, replace the maple syrup with a sugar free syrup like Lakanto Maple Syrup.

Banana pudding is a classic southern dessert. Right up there with red velvet and peach cobbler, you'll always find banana pudding on the dessert table in south no matter the occasion. So what better dessert to make into a bite-sized cake form.
I've come a across quite a few banana pudding cupcake recipes but none them seemed quite right so I decided to create my own. I knew I wanted to make the cupcake banana flavor because who doesn't love bananas. This cake is light fluffy and perfectly sweet. Brown sugar help to add a extra depth of flavor that compliments the bananas really well.
French vanilla pudding mix, cream cheese, sweetened condensed milk and whipped cream come to gather to form the luscious, rich and creamy frosting that gets coated in crushed vanilla wafers giving the prefect change in texture.
You have to give the cupcakes a shot even if its just for the banana cake which is delicious on its own. Or dunk vanilla wafer into the pudding mixture. Thats pretty great too!

Tips On How To Make This Recipe
- Make sure the bananas are mashed well. Bigger chunks in batter will cause the cupcakes to raise unevenly.
- Mix the pudding and cream cheese before adding in sweetened condensed milk. Adding the sweetened condensed milk too soon will not allow the blend to combine well.

Southern Key Lime Pound Cake
Pound cake and key lime pie are southern staples and what better way to bring them together than this cake. It's super moist, dense and tart, for a perfect combination.

Since the end of the world began, I've found myself in the kitchen more often than I probably should. I must admit when the pandemic first began I was concerned with not emerging from alienation like one of the humans from Wall-E.
But it's almost been a year since the first lock and well...who cares. I am fully content with coming out of my cocoon with my life not being all together. Because in reality we are all just hanging on for dear life physically and emotionally. The last thing anyone needs on top of this traumatic experience is the expectation of perfection.
I say all of that to the excuse the fact that I made this awesome cake and ate most of it by myself. I did share some with the hubby. Every morning all I wanted was a slice of this key lime pound cake with a cup of coffee to start my day.

What Is A Pound Cake?
Pound cakes are one the easiest and most adaptable recipes. The American pound cake is made with a pound of each ingredient, specifically flour, sugar, eggs and butter.
However, there are many variations. For example some recipes include baking powder or baking soda, milk, oil, sour cream and/or cream cheese. In this recipe we use cream cheese to add extra moisture and to compliment the tanginess of the key limes and of course key lime juice.
Key limes have been hard to find for me lately. They are also very small. So, I love using Nellie & Joes Juice Key West Lime Juice. It's available in most groceries stores and online.
Originally I had a time of 5 minutes for cream the butter and sugar in order to aerate the batter, but that is actually too long in most instances and environments. When baking it’s more import to go by what to look for than a time limit as there are so many factors at play. Long story short, beat the butter and sugar on medium speed until light, fluffy and slightly pale in color. The process should take about 2 minutes but may be longer if you’re using a hand mixer or you live in a cold environment.

How To Make A Key Lime Pound Cake?
There is enough batter in this recipe for a 10 cup bundt pan. However a 10 inch pan can be used however it will yield in a shorter cake. If using a large pan check the doneness after an hour and then re-check every 5 minutes.Key limes have been hard to find for me lately. They are also very small. Bundt Pan Tips Tricks
This recipe starts off with choosing the right bundt pan. Bundt pans come in many shapes and sizes. Nordic ware is my favorite brand. Their quality is always consistent and they have beautiful designs.
Speaking of designs, the more intricate, the more difficult getting a cake out will be. Using pan release is your best bet. There are plenty of brands out there that have good reviews like Pan and Wilton. I however have always used a homemade version from Sugar Geek Show. Another option is to generously brush on vegetable shorting with pastry brush or paper towel and dust with flour, or cocoa powder for a chocolate cake, making sure not to leave any clumps of flour in the pan.
When spraying or brushing on the pan release make sure you are getting into every nook and cranny even put in a little extra in spots that might be a little difficult. But if all else fails and cake doest come out in pieces, patch it up while the cake is still warm. The heat will help it to stick. And always remember icing can cover a multitude of sins.

Tips On How To Make This Recipe
- Bundt Pan Size: This recipe perfectly fills a 10 cup bundt pan but you can also use a 12 cup which will give you a short cake. If using a pan large an 12 cup check the doneness at 1 hour and every 5 minutes after that.
- Whip the butter and the sugar until light and fluffy (about 5 minutes).
- Once all of the flour is incorporated stop mixing and don't forget to scrape the sides.
- If you don't have key limes you can substitute them for regular limes. You could even use bottled key lime juice.

Thai Red Chicken Curry
This post may contain affiliate links, please see my affiliate notice for details.
About a year ago my coworkers and I were invited to Chateau Elan for a three course cooking class with one of their awesome chefs. Beforehand our team got to vote which recipes we wanted to try out. For our starter we chose crab cakes, Thai shrimp with coconut rice for the entree and crepes suzette to top it all off. All three courses were served with a glass (or a couple glass) of Chateau Elan wine paired perfectly with each recipe.
Funny story. The very last wine that was served with the crepes suzette was an amazing port. It hurt my heart when I could finish it. Little did I know my heart was going to get stompted on when I found it was a $150.00 bottle. As someone who does spend more that $30.00 on wine (at least until I hit the lotto), I seriously thought about going back up the stairs to finish it. But oh well...it shall stay forever in my memories.
As much as I loved it I passed it by in shop and went for the Chateau Elan Velvet Reserve and Cherokee White for me and the Cherokee Rosé for the ma-in-law (my wine lover in crime).
Soon I will share at the other two recipes with my own twist of course. But for today I'll be sharing a version of a Thai favorite inspired by the Chateau Elan recipe.
What You Ned For This Recipe
- Chicken
- Onions
- Pepers
- Garlic
- Red Curry Paste
- Broccoli
- Coconut Milk
- Brown Sugar
- Water
- Fish Sauce
- Cilantro or Basil
- Salt & Pepper
- Lime Wedges
How To Make Thai Red Curry Chicken
In my version I replace the shrimp with chicken. Shrimp is great for me but for for my hubby, who's allergic the shellfish. So in order to make it allergen free I use chicken instead. I also replace the green curry with red curry. Its just my personal favorite.
The best thing about this recipe is you can adapt it to your tastes and needs. This is the perfect dish to dump any veggies and meats leftover in your fridge. Of course don't forget a big bowl of rice to soak up all those flavors. My favs are jasmine and basmati.
Tips On How To Make This Recipe
- Full fat coconut milk works best. Light coconut milk contains more water thus it won't give you the creamy and flavorful as full coconut milk.
- If using shrimp in place of chicken, pork or beef, add the shrimp at towards the end of cooking until pink and cooke though.
- Don't forget the limes, fresh basil and/or cilantro. They really take the recipe to another level.
Enjoy,
