Pound cake and key lime pie are southern staples and what better way to bring them together than this cake. It's super moist, dense and tart, for a perfect combination.

Since the end of the world began, I've found myself in the kitchen more often than I probably should. I must admit when the pandemic first began I was concerned with not emerging from alienation like one of the humans from Wall-E.

But it's almost been a year since the first lock and well...who cares. I am fully content with coming out of my cocoon with my life not being all together. Because in reality we are all just hanging on for dear life physically and emotionally. The last thing anyone needs on top of this traumatic experience is the expectation of perfection.

I say all of that to the excuse the fact that I made this awesome cake and ate most of it by myself. I did share some with the hubby. Every morning all I wanted was a slice of this key lime pound cake with a cup of coffee to start my day.

What Is A Pound Cake?

Pound cakes are one the easiest and most adaptable recipes. The American pound cake is made with a pound of each ingredient, specifically flour, sugar, eggs and butter.

However, there are many variations. For example some recipes include baking powder or baking soda, milk, oil, sour cream and/or cream cheese. In this recipe we use cream cheese to add extra moisture and to compliment the tanginess of the key limes and of course key lime juice.




How To Make A Key Lime Pound Cake?

There is enough batter in this recipe for a 10 cup bundt pan. However a 10 inch pan can be used however it will yield in a shorter cake. If using a large pan check the doneness after an hour and then re-check every 5 minutes.

Key limes have been hard to find for me lately. They are also very small. So, I love using Nellie & Joes Juice Key West Lime Juice. It's available in most groceries stores and online.

Originally I had a time of 5 minutes for cream the butter and sugar in order to aerate the batter, but that is actually too long in most instances and environments. When baking it’s more import to go by what to look for than a time limit as there are so many factors at play. Long story short, beat the butter and sugar on medium speed until light, fluffy and slightly pale in color. The process should take about 2 minutes but may be longer if you’re using a hand mixer or you live in a cold environment.


Bundt Pan Tips Tricks

This recipe starts off with choosing the right bundt pan. Bundt pans come in many shapes and sizes. Nordic ware is my favorite brand. Their quality is always consistent and they have beautiful designs

Speaking of designs, the more intricate, the more difficult getting a cake out will be. Using pan release is your best bet. There are plenty of brands out there that have good reviews like Pan and Wilton. I however have always used a homemade version from Sugar Geek Show. Another option is to generously brush on vegetable shorting with pastry brush or paper towel and dust with flour, or cocoa powder for a chocolate cake, making sure not to leave any clumps of flour in the pan. 

When spraying or brushing on the pan release make sure you are getting into every nook and cranny even put in a little extra in spots that might be a little difficult. But if all else fails and cake doest come out in pieces, patch it up while the cake is still warm. The heat will help it to stick. And always remember icing can cover a multitude of sins.



Tips On How To Make This Recipe

  • Bundt Pan Size: This recipe perfectly fills a 10 cup bundt pan but you can also use a 12 cup which will give you a short cake. If using a pan large an 12 cup check the doneness at 1 hour and every 5 minutes after that.
  • Whip the butter and the sugar until light and fluffy (about 5 minutes).
  • Once all of the flour is incorporated stop mixing and don't forget to scrape the sides.
  • If you don't have key limes you can substitute them for regular limes. You could even use bottled key lime juice.
