I've come a across quite a few banana pudding cupcake recipes but none them seemed quite right so I decided to create my own. I knew I wanted to make the cupcake banana flavor because who doesn't love bananas. This cake is light fluffy and perfectly sweet. Brown sugar help to add a extra depth of flavor that compliments the bananas really well.
What You Need For This Recipe
- Ripe Bananas
- Lemon Juice
- Flour
- Baking Soda
- Salt
- Butter
- Sugar
- Brown Sugar, Light or Dark
- Eggs
- Vanilla
- Buttermilk
- Instant French Vanilla Pudding
- Milk
- Cream Cheese
- Sweetened Condesensed Milk
- Heavy Whipping Cream
- Mini Vanilla Wafer Cookies

French vanilla pudding mix, cream cheese, sweetened condensed milk and whipped cream come to gather to form the luscious, rich and creamy frosting that gets coated in crushed vanilla wafers giving the prefect change in texture.
You have to give the cupcakes a shot even if its just for the banana cake which is delicious on its own. Or dunk vanilla wafer into the pudding mixture. Thats pretty great too!

Tips On How To Make This Recipe
- Make sure the bananas are mashed well. Bigger chunks in batter will cause the cupcakes to raise unevenly.
- Mix the pudding and cream cheese before adding in sweetened condensed milk. Adding the sweetened condensed milk too soon will not allow the blend to combine well.
