You may have noticed I have an thing for pound cakes. Growing up south gave me a hard core love for southern delicacies. I remember going to my aunts restaurant and grabbing a slice of buttery pound cake made by my great cousin. She would never give up her secret so I searched high and low for a recipe that was like hers. Personally I'm a a fan of the traditional American recipe, pound of sugar, eggs, flour, and butter with splash of vanilla. Buttery, dense, cakey perfection!

What You Need To Make This Recipe

  • Flour
  • Unsalted Butter
  • Sweet Potatoes
  • Sugar
  • Brown Sugar, Light or Dark
  • Eggs
  • Buttermilk
  • Vanilla
  • Flour 
  • Cinnamon
  • Nutmeg
  • Clover
  • Salt

Some people like the hubby don't have the fondness that I have for pound cake. It is a very simple cake and full of many frills besides compote and whipped cream. But what makes pound cake great is how many variations there are, like my key lime pie pound cake and this sweet potato pound cake. 

I typically add cream cheese to my pound cakes, however this time I added buttermilk. It gives off the same tanginess as the cream cheese but it also makes the crumb a little light in texture.


Tips On How To Make This Recipe

  • There is no leavening agent, aka baking powder or baking soda, so the rise will come from the air we whip into the butter and sugar. At this stage we'll whip these to ingredients for at least 5 mins and then move on with the rest of the recipe. 
  • As with every cake, once all of the flour is incorporated stop mixing and don't forget to scrape the sides!
